Sirloin steak with strawberry & jalapeño salsa

An unusual but genuinely delicious combination – even for savoury berry sceptics! Any leftover salsa is good with tortilla chips as a snack.

Ingredients

  • 400g frozen Essential French Fries (optional)
  • 2 x 400g packs 2 British sirloin steaks
  • 3 tsp sunflower oil, for frying
  • ⅔ x 100g pack coriander, leaves finely chopped
  • Green salad, to serve, optional

For the salsa

  • 400g strawberries, hulled, then diced
  • 1 jalapeño chilli, finely chopped (deseeded if you prefer less heat)
  • 1 small echalion shallot, finely diced
  • 2 limes, juice
  • ½ tsp sugar, or to taste

Method

  1. If serving this with the fries, preheat the oven and cook according to pack instructions.

  2. To make the salsa, mix all the ingredients in a bowl and season with salt. Leave to marinate.

  3. Heat a large heavy-based frying pan or griddle over a high heat until smoking. Rub the steaks with 2-3 tsp oil and season well with salt. Once the pan is ready, fry the steaks for 2-3 minutes each side, ensuring all cut sides are browned, pressing down with a spatula as they cook (2 minutes for rare, 3 for medium). Transfer to a plate to rest for 2 minutes.

  4. Stir the coriander through the salsa and taste. Depending on the strawberries, you might need to add a little more sugar. Serve the steaks with the salsa and chips, if using, with the salad on the side, if liked.

Cook’s tip

For successful searing it’s best to give meat room in the pan, particularly steaks. If the pan won’t fit all 4 at once, cook in batches.
