Salt, olive oil, vinegar and sun-ripened tomatoes are all that’s needed to make Maria Elia's fragrant, colourful salad. Make it a few hours ahead to allow the flavours to infuse.

- 450g mixed tomatoes (preferably different colours and sizes)
- 1½ tbsp red wine vinegar
- 3 tbsp extra virgin olive oil
Cut the tomatoes into even-sized chunks; arrange on a platter or in a large, shallow bowl. Sprinkle with salt, drizzle with the vinegar and olive oil, then set aside for at least 10 minutes before serving at room temperature.
