Sparkling Lady Grey & citrus iced tea

Ingredients

  • 2 Twinings Lady Grey Tea Bags
  • 75g granulated sugar
  • 2 oranges, scrubbed, strips of peel from both, juice of 1
  • 2 unwaxed lemons, strips of peel from both, juice of 1
  • ice cubes
  • 800ml Indian tonic water with lemon

Method

  1. Put the tea bags into a jug and add 100ml cold water. Cover, then steep in the fridge overnight (or at least 12 hours).

  2. Put the sugar, orange and lemon juice and half the peels into a pan with 50ml water. Place over a medium heat, stirring occasionally, until the sugar dissolves. Turn up the heat, simmer for 1 minute, then remove from the heat and leave to cool.

  3. Remove and discard the tea bags without squeezing them. Remove and discard the peels from the syrup. Stir the syrup into the tea.

  4. To serve, fill 6 glasses with ice, then add 1 tbsp tea syrup to each glass with the remaining citrus peels. Top with tonic water, then stir and serve.
