Rosemary paloma

An iconic Mexican cocktail, the paloma has taken the UK by storm. This wintry upgrade is from El Pastor restaurants. Fresh and citrussy from the grapefruit and lime, peppery and bold from the tequila and rosemary, it hits all the right notes.

Ingredients

  • 15ml lime, juice freshly squeezed
  • 1 tsp sea salt flakes
  • 40ml Tequila Blanco
  • 35ml pink grapefruit, freshly squeezed
  • 15ml agave syrup
  • 4 sprig/s rosemary
  • 100ml soda water

Method

  1. Prepare a lowball glass by rubbing the rim with lime, dipping it into sea salt flakes and filling with ice.

  2. Put the tequila, grapefruit juice, lime juice and agave in a cocktail shaker. Crush 3 sprigs of rosemary in your hands to release the oil and add to the shaker too. Shake well and strain into the prepared glass

  3. Top up with soda and garnish with the remaining sprig of rosemary
