Ingredients

Red cabbage, carrot & mint sambol

  • 6 shallots, finely sliced
  • 8 fresh curry leaves, finely shredded
  • ½ x 25g pack mint leaves, finely shredded, plus extra leaves to serve
  • ¼ red (or white) cabbage, finely shredded
  • 2 carrots, peeled and cut into matchsticks
  • 2 unwaxed limes, zest and juice
  • ½ tsp salt, or to taste

Method

  1. Mix all the ingredients together in a bowl and season with the salt. Transfer to a platter and scatter over extra mint leaves to serve.
