Ingredients

  • ¼ finely sliced
  • 1 lime, juice
  • 160g frozen edamame beans
  • 250g pouch red & white quinoa
  • 150g pack coriander & chilli king prawns
  • 1 Gem Gourmet Avocado, halved and sliced
  • 3 tbsp kimchi
  • tbsp soy sauce
  • 1 tsp clear honey
  • 1 tsp toasted sesame oil
  • White or black sesame seeds, to serve (optional)

Method

  1. Put the red onion in a small bowl with the lime juice and a pinch of salt; stir and set aside. Microwave the edamame beans according to pack instructions and set aside.

  2. Heat the quinoa according to pack instructions, then divide between 2 shallow bowls. Top with the prawns, avocado, kimchi and edamame.

  3. Lift the red onion from the lime juice and scatter over the bowls. Add the soy sauce, honey and sesame oil to the lime juice and mix together. Spoon this dressing over the bowls. Scatter with sesame seeds to serve, if liked.

Cook’s tip

Leftover Kimchi? This Korean condiment of fermented cabbage and other vegetables is punchy, tangy and spicy. It’s delicious added to noodle soups and cheese toasties, plus it makes a brilliant topping for avocado toast.
