Apples and pork make happy tray-fellows in this autumnal one pot. The garlicky smoked butter adds a complexity you’ll love (and might want to try with chicken too).

  • 400g pack 2 Essential British Pork Chops
  • 2 red-skinned apples, such as Braeburn, cut into wedges and cored
  • 1 red onion, cut into wedges
  • 1 tbsp olive oil
  • 1 tbsp clear honey
  • 3 sprig/s rosemary, roughly chopped, plus a few leaves to serve
  • 450g pack carrot, swede & potato mash, warmed, to serve
  • 1 tsp balsamic vinegar
  • 25g frozen Cooks’ Ingredients Smoked Butter, defrosted


  1. Preheat the grill to medium. Place the pork chops into a grill pan or sturdy roasting tin, then season.

  2. Toss together the apple, onion, olive oil, honey, chopped rosemary and some seasoning. Arrange around the pork chops and grill for 20-25 minutes, turning once or twice until the apple is golden and the pork is cooked through with no pink meat and the juices run clear. Heat the mash according to pack instructions.

  3. Drizzle the vinegar over the chops, then top with the butter and a scattering of rosemary leaves. Return to the grill for 1-2 minutes until the butter has melted, then serve with the vegetable mash.

Cook’s tip

As an alternative to Cooks’ Ingredients Smoked Butter you can make your own by simply beating together 25g softened butter, 1 small crushed clove garlic and ¼ tsp hot smoked paprika.
