Using a vegetable peeler, pare 16 long thin slices from 1 large carrot and put into a bowl.
Using your hands, gently coat with 1 tbsp olive oil, some seasoning and 1 tsp smoked paprika.
Finely chop 2 sprigs rosemary. Cut 2 packs halloumi into 8 sticks each, roll in the rosemary, then wrap each stick in a slice of carrot ‘bacon’.
Roast on a large baking tray at 200ºC, gas mark 6 for about 20 minutes until golden.
You could also make this dish with meat-free sausages.
