Ingredients

  • 8 ripe Waitrose Yellow Flesh Nectarines, quartered and stones removed
  • 2 lemons, juice
  • 1 tsp vanilla bean paste
  • 140g light brown soft sugar
  • 200g salted butter
  • 150g plain flour
  • 130g Jordans Tropical Fruits Crunchy Oat Granola
  • Double cream or vanilla ice cream, to serve (optional)

Method

  1. Preheat the oven to 180ºC, gas mark 4. Toss the nectarines with the lemon juice, vanilla and 75g of the sugar; spread over a deep ovenproof dish (about 25x30cm).

  2. In a large bowl, use your fingertips to rub together the butter and flour until you have a soft, breadcrumb-like texture with lots of chunky clumps. Stir in the remaining 65g sugar and the granola. Sprinkle the mixture over the nectarines, then bake for 30-35 minutes. Leave to stand for 10 minutes before serving with double cream or ice cream, if liked.

Cook’s tip

For a flavour twist, swap the lemon juice for the juice of 1 large orange. The vanilla can be replaced with 1 tsp orange blossom water, too.
