Gingered beef, cucumber pickle & greens with rice

Ingredients

  • 250g pack beef stir fry strips
  • 30g piece ginger, finely grated
  • 2 tbsp Cooks' Ingredients Teriyaki Sauce
  • 1 tbsp Japanese (or Chinese) Rice Vinegar
  • 1 tbsp caster sugar
  • 8 cm piece cucumber
  • 4 salad onions
  • 300g pouch brown rice and edamame bean stir fry
  • 1 tbsp vegetable oil
  • ½ x 25g pack coriander, leaves chopped (optional)

Method

  1. Pat the beef dry between several layers of kitchen paper. Combine in a bowl with the ginger and teriyaki sauce and leave to stand while preparing the pickle.

  2. Mix the vinegar and sugar in a small bowl. Cut the cucumber widthways into 3 and cut each piece into thin batons. Halve the salad onions lengthways then cut into similar lengths to the cucumber.

  3. Add both the cucumber and salad onions to the bowl of vinegar and sugar and mix well. Heat the rice stir fry in the microwave according to pack instructions.

  4. Heat the oil in a frying pan or wok and stir fry the beef for 4 minutes, until browned all over and just cooked through. Add the rice pouch and coriander, if using, and mix well. Spoon onto plates and serve with the cucumber pickle.

Cook’s tip

You can switch the beef to a pack of pork stir fry, or cut 250g chicken breast fillets into thin strips instead. Plain tofu, marinated in the teriyaki and ginger as above, makes a great veggie choice.
