Entente cordiale cocktail

This is a play on a French 75, so named because it had a kick like the famous French guns, and was traditionally made with French Champagne and English gin. Here, we’ve swapped it around using Waitrose botanical gin (made in France) and English sparkling wine.

Ingredients

  • 1 unwaxed lemon
  • 100ml No.1 Dry Gin
  • 30ml pure cane sugar syrup
  • Ice cubes
  • 120ml Leckford Estate Brut

Method

  1. Pare 2 wide strips of zest from the lemon, then squeeze the juice to make 2 tbsp.

  2. Put the gin, lemon juice and sugar syrup into a cocktail shaker with ice and shake until the outside of the shaker is frosty.

  3. Strain the liquid into 2 Champagne flutes or wine glasses and top up with the sparkling wine. Squeeze the lemon strips gently over the top of each glass to release the lemon oil, then drop one into each glass and serve.

Cook’s tip

To make these for a party, increase the quantities accordingly, then mix the gin, lemon and sugar together with a large splash of water and chill in advance. When ready to serve, simply pour into glasses and top up with the wine.
