Date & walnut dip
This can be nicely paired with rye or crisp pitta breads and crudités. It can be made in advance and is always a hit at dinner parties. The saltiness of the soft cheese is balanced with sweetness from the dates, while the walnuts add a nice savoury note.

Ingredients
- 80g walnuts
- 140g medjool dates, stones removed and finely chopped
- 200g soft cheese
- 200g creme fraiche
- 2 tbsp lemon juice
Method
Put the walnuts in a small pan over a medium-high heat and toast for 3 minutes; tip onto a board and finely chop. Set aside ½ the nuts, then put the remainder in a bowl with the dates, soft cheese, crème fraîche and lemon juice. Mix together thoroughly and season. When ready to serve, top the dip with the reserved walnuts and a generous sprinkling of black pepper.

Walnuts
Toast in a dry frying pan over a mediumhigh heat for a few minutes. Chop, then transfer to an airtight container ready for scattering over soups, salads and porridge.
