A quick and easy one-pan dish of flaky cod in a tomato, vegetable and chorizo sauce.

Heat the oil in a pan and fry the parsnip and chorizo for 2-3 minutes. Add the passata and nutmeg, and bring to the boil. Stir in the kale, cover and simmer for 3-4 minutes.
Add the cod, cover and cook for 3 minutes, or until the fish is just cooked.
