Clementine gimlet

A festive make-ahead cocktail adapted from London's Oma. Store in the fridge for up to five days.

Ingredients

  • 250ml London Dry Gin
  • 10g fresh thyme
  • 20g fresh lemon thyme
  • 30g fresh basil
  • 100ml clementine juice
  • 150ml lemon juice (from 5-6 lemons)
  • 100ml light agave syrup

Method

  1. In a 1-litre container with a top, combine the gin, fresh thyme, fresh lemon thyme and fresh basil. Leave to infuse in the fridge for several hours or overnight.

  2. Sieve into a large, clean container or bowl and add the clementine juice, lemon juice, light agave syrup and 200­ml water. Keep covered in the fridge for up to 1 day.

  3. To serve, shake 100ml per person with ice and pour into a martini or coupe glass. Garnish with clementine slices and more thyme.
