Heat a large, heavy-based griddle or frying pan over a medium-low heat. Butter the bread on both sides.
Mix the cheeses together and divide between 4 slices of sourdough. Scatter over the chilli, then firmly press the remaining bread slices on top to make 4 sandwiches.
Cook the sandwiches in the hot pan (you may need to do this in 2 batches) for 4-5 minutes each side, until the sourdough is crunchy and golden and the cheese has melted. Cut in half and serve immediately.
