Not all smoothies are worth getting the blender out for, but this one certainly is – the perfect balance of vegetables and fruit, with a fiery kick from fresh ginger. If you want a little extra sweetness, add a chopped medjool date to the blender.

Ingredients

  • 150ml beetroot juice
  • 1 ripe banana (about 80g)
  • 100g frozen mixed berries
  • 50g cucumber, roughly chopped
  • 50g baby spinach leaves
  • 10g ginger, peeled and roughly chopped
  • 6 fresh mint leaves
  • 2 Brazil nuts

Method

  1. Put all the ingredients in a blender (ideally high-speed) with 150ml cold water and a handful of ice cubes. Blend until smooth, then pour into glasses.

Cook’s tip

Use 150g LoveLife Frozen Berry Smoothie Mix instead of adding bananas and berries separately.
