Barbecued raclette pizza

A cheese lover’s dream dinner featuring oozy molten raclette. Ready-made dough makes this super-quick and easy – cook it on the barbecue or in the oven.

Ingredients

  • 400g pack Pizza Express Ready to Roll Pizza Dough
  • ½ x 285g jar pickled cornichons & onions
  • 1 tsp Dijon mustard
  • 200ml pot crème fraîche
  • 90g pack Wild Rocket
  • 2 tbsp French dressing
  • Plain flour, for dusting
  • 2 tbsp olive oil, for brushing
  • 200g pack Emmi Raclette Slices

Method

  1. If using a charcoal barbecue, set it up to have a cooler spot (with most of the coals banked on one side). If using a gas barbecue, preheat it to about 220°C. Divide the pizza dough into 2 halves, then set aside at room temperature for 15 minutes.

  2. Meanwhile, slice the cornichons and halve the pickled onions. In a bowl, mix together the mustard and crème fraîche; season. In a separate bowl, toss the rocket with the dressing. Set both aside.

  3. When ready to cook, on a lightly floured surface, roll 1 piece of dough out into a rectangle roughly 20x30cm. Place on a floured, flat baking tray and brush the top with oil. Flip it directly onto the cooler side of the barbecue (oiled side on the grate), cover with a lid and cook for 1 minute 30 seconds, then use a metal barbecue spatula to return it to the tray. Brush oil over the uncooked side, then turn it over on the tray so the cooked side is uppermost.

  4. Spread the crème fraîche mixture over the base. Top with ½ of the raclette slices. Return to the barbecue (cheese-side up), cover with a lid and cook for 2 minutes-2 minutes 30 seconds until the dough is golden and cooked through and the cheese has melted. Remove from the heat and scatter with ½ of the cornichons and onions. Repeat to cook the second pizza. Arrange some dressed rocket on top of the pizzas and serve the remainder on the side.

Cook’s tip

To oven bake:
Preheat the oven to its highest temperature with a large fl at baking sheet on the upper shelf. Roll out the dough and place on a sheet of baking parchment (no oil required). Continue from step 4, lifting the parchment onto the hot baking sheet; bake for about 8 minutes.
