Air-dried

Drying is an ancient method of preservation which works on the principle that the micro-organisms that cause food to decay need water to grow and multiply. A variety of different methods of commercial drying methods are used nowadays - air drying is the simplest method, where the food is dried either naturally in the sun or in a tunnel drier where hot air is blown on to the food, Air dried foods include dried fruits, sun-dried tomatoes, pulses and grains and herbs and spices.
