Juicy winter oranges are wonderful in salads and desserts, or with rich meats such as duck. Segmenting removes all of the bitter white pith, and you can use this technique for grapefruits, too.

Step 1
Using a sharp knife, carefully slice off the top and bottom of the orange.

Step 2
Using even downward strokes, slice the skin away from the flesh and discard.

Step 3
Remove any remaining white pith.

Step 4
Cut between the membranes to segment the orange, retaining any juices.
