Preheat oven to 220˚C,
gas mark 7

Wash a whole cauliflower and remove any leaves

 

 

On a cutting board, cut the stem so the cauliflower sits flat, then cut into sections. The aim is to get 2 vertical thick slices from either side of the centre of each cauliflower

 

 

Brush a large baking tray with oil and space the steaks out on it

Brush the tops of the steaks generously with oil and season

Roast for 20-25 minutes, turning halfway, until golden and soft

Serve 1 cauliflower steak
per person,
and feel free to spoon over
spices, nuts or dressing
