Oven cook

Preheat oven. Place joint into cooking pot and cover with stock, replace the lid and place into the centre of the oven. Cook for 2 to 21/2 hrs until the joint is tender. Remove the joint from the pot and rest for 10 minutes. Remove strings and carve. Ensure that the meat is thoroughly cooked, the juices run clear and the meat is tender. Do not reheat once cooled. (Time 2 to 21/2 hrs, Oven: 180°C, Fan: 160°C, Gas: Gas Mark 4)
