OVEN COOK. Preheat oven. Remove all packaging. Lift the lemon slices off the lamb and place the lamb into a large frying pan. Add the lemon slices next to the lamb in the pan. Pan fry the meat for 2 minutes on each side or until browned, taking care that the lemon slices do not overcook. Place the lemon slices and rosemary back on top of the lamb and transfer to the oven in a roasting tray, cook for 12-15 minutes. Cook thoroughly until the juices run clear. Rest the lamb for 3-5 minutes. Whilst the lamb is resting finely chop the roasted lemon slices and sprinkle back over the lamb to serve. Do not reheat once cooled. (Time 12-15 mins, Oven: 200°C, Fan: 180°C, Gas: Gas Mark 6)
