These eggs are an exciting treat when the Ostrich birds begin to lay from March through to early summer. The birds range on lush pastures with plenty of open space allowing them to freely express their incredibly inquisitive nature. With a distinctive light flavour and texture the Ostrich egg is ideal for cooking, why not impress friends with a soft-boiled ostrich egg fondue at a dinner party shared with crudités or as a really unusual starter: hard boil and slice then scatter with pine nuts and tarragon. Weighting in at nearly 2 kg each ostrich egg is roughly equivalent to twenty-four large hen eggs. Ideal for a big celebration breakfast - enough scrambled egg for a great family get together. However you enjoy this impressive egg you are sure to have enough to go around. To soft boil, place in boiling water for approximately 50 minutes, to hard boil 1-1/2 hours. Please be aware the shells will retain their heat after cooking so plunge into cold water to stop them over-cooking. Its large smooth shell is hard like a China cup which makes it ideal for decorating once blown. If you wish to keep the shell intact to decorate, carefully make a hole in the bottom of the egg and empty the contents into a mixing bowl.
