Dry cured pork sausage with Comté cheese.
A French delicacy from the Aveyron region: dry cured salami-style sausage made with French pork and speckled with soft, creamy chunks of the iconic Alpine cheese, PDO Comté. The saucisson is made to a traditional recipe passed down through generations, and cured for at least 26 days for a rich, intense flavour, which is complemented by the creamy, slightly fruity taste of PDO Comté that's matured for a minimum of four months on aromatic spruce boards. Our saucissons secs are made using a traditional artisanal process, so the length and shape of each one will vary slightly, and no two will be exactly the same.
