CASSEROLE. Preheat oven. Heat 1 tbsp of oil in a non-stick frying pan. Add meat and cook for 4-5 mins until browned. Add 400ml of stock, bring to the boil. Transfer to an ovenproof dish, cover and place in oven. Ensure that the meat is thoroughly cooked, the juices run clear and the meat is tender. Do not reheat once cooled. (Time 2-2½ hours, Oven: 180ºC, Fan: 160ºC, Gas: Gas Mark 4)
