Pizza Capricciosa Proscioutto Ham, Artichokes & Taggiasca OlivesSlow Proved & Wood Fired.To make pizzas as authentic and delicious as any pizzeria in Italy, our starting point has always been the base, From a 'mother dough' starter, we create sourdough pizza bases in the traditional Neapolitan style. After slow-proving for 24 hours, we fire them in a wood oven before we add our toppings by hand. In Liguria, rocky outcrops rise from cobalt-blue seas where clusters of olive trees grow; this is where we get Taggiasca olives for our Capricciosa. The slopes make for a difficult harvest, but they are more than worth it for their distinct mix of sweetness and salty richness. We scatter the olives over hand-torn ham and mascarpone, an unusual addition on a Capricciosa that gives this pizza a delicate creaminess.
