    Serves: 2

    • 2 Waitrose Aberdeen Angus Sirloin Steaks, each weighing approximately 200g, from the Service Counter
    • The salsa verde:
    • 2 tbsp Opie capers, drained
    • 2 garlic cloves, peeled and roughly chopped
    • 2 Waitrose Anchovy Fillets, chopped
    • 1 pack Waitrose Fresh Basil
    • 2 tbsp parsley, roughly chopped

    1. Preheat the barbecue or grill.
    2. In a blender, whizz together all the salsa ingredients to make a smooth sauce
    3. Score one side of each steak in a criss-cross pattern with a sharp knife, cutting only about one third of the way into the surface. Spread 1 tbsp of the salsa over each scored side.
    4. Cook the steaks for 3-5 minutes on each side until cooked to your liking.
    5. Serve the steaks with an extra spoonful of salsa verde, a salad of red and yellow cherry tomatoes and buttered steamed new potatoes.
