Cook thoroughly until the juices run clear and there is no pink meat.
Oven cook
From Chilled
Preheat oven. Remove all packaging. Allow the pork to rest for 10 minutes to enable the colour to return and any containment odour to disappear. This does not affect the quality of the pork. Place in a roasting tray in centre of oven. Cook for 30 minutes or until crackled and reduce temperature to 180°C electric, 160°C fan, gas mark 4 for remaining time. Cover with foil, rest for 10-15 minutes then remove bands before carving. Cook thoroughly until the juices run clear and there is no pink meat. Do not reheat once cooled. Cook's Tip: To achieve good crackling, brush rind with a little oil and rub in plenty of salt. CARVING INSTRUCTIONS. Once rested the joint will carve easily, keep on a warmed plate ready to serve. For ease of carving remove the strings then run a knife under the crackling cutting away from you. Once the crackling has been removed this can be cut into pieces. If you prefer your meat a little leaner you can trim some of the fat off the joint. Slice joint and pour over some of the meat juices or add this to your gravy for extra flavour. Do not reheat once cooled. (Time 30 mins per 500g + 30 mins, Oven: 220°C, Fan: 200°C, Gas: Gas Mark 7)
