Turkey burgers with red cabbage and apple slaw

Serves: 4
500g fresh free range turkey breast mince
1 large onion, grated
1 tbsp thyme leaves
1 red cabbage
2 essential Waitrose apples, cut into matchsticks
½ x 15g pack chives, chopped
4 tbsp essential Waitrose half fat soured cream
2 tsp essential Waitrose dijon mustard
juice of ½ lemon
2 tsp olive oil
4 essential Waitrose wholemeal baps
1. Put the turkey mince in a bowl. Add the onion and thyme leaves; season and mix together. Shape into 4 burger patties and chill until ready to cook.
2. Shred the cabbage and place in a bowl with the apples and chives. Mix together the cream, mustard and lemon juice. Toss with the cabbage and apple; season.
3. Heat a griddle pan on a medium-high heat. Brush the burgers with the olive oil and griddle for 5-6 minutes on each side. Halve thel baps and griddle for 1-2 minutes until lightly toasted. Put the burgers in the buns with some slaw and serve with the extra slaw on the side.
