Tuna steak with pepper sauce

Serves: 2
1 tbsp olive oil
1 red pepper, diced
1 red onion, sliced
100ml chicken stock
½ x 25g pack basil
240g pack tuna steaks
115g pack baby spinach
2 tbsp French dressing
1. Heat the oil in a saucepan and fry the pepper and half the onion for 3-4 minutes. Pour over the stock, cover and cook for 5 minutes, stirring occasionally. Add the basil and blitz with a stick blender until smooth. Season to taste.
2. Meanwhile, brush the tuna with a little oil and griddle or fry for 3-4 minutes each side according to taste.
3. Toss the spinach with the remaining onion and dressing and serve with the tuna and pepper sauce.
