    Tortelloni with roasted tomato and basil sauce

    250g pack essential Waitrose Cherry Tomatoes
    1 tbsp olive oil
    1 tbsp balsamic vinegar
    1 clove garlic, finely chopped
    25g pack fresh basil, shredded
    300g pack essential Waitrose
    Tomato, Mozzarella & Basil Tortelloni


    1. Preheat the oven to 200˚C, gas mark 6. Mix together the tomatoes, oil, vinegar, garlic, half the basil and seasoning, place on a baking tray and roast for 15 minutes. Press the tomatoes down slightly with the back of a spoon.

    2. Meanwhile, cook the tortelloni according to pack instructions, drain and return to the pan. Stir in the tomatoes, excess juice and remaining basil.
