500ml vegetable stock
75g Waitrose Quick Cook Barley Mix
400g can essential Waitrose Cream Of Tomato Soup
1 essential Waitrose Courgette, coarsely grated
4 essential Waitrose Salad Onions, sliced
1. Bring the vegetable stock to a simmer in a large pan. Add the barley mix and cook, covered, for 10 minutes. Add the tomato soup, courgette and salad onions, and cook for a further 3-4 minutes.
2. Serve with crusty brown bread.
