    Strawberry custard split ice lollies

    Strawberry custard split ice lollies

    • Preparation time: 10 minutes + freezing
    • Cooking time: 10 minutes
    • Total time: 20 minutes + freezing

    Makes: 8 lollies (100ml each)

    Ingredients

    FOR THE STRAWBERRY LAYER
    400g pack strawberries, washed and hulled
    100g caster sugar
    4 tbsp lemon juice

    FOR THE CUSTARD LAYER
    250g Waitrose Madagascan Vanilla Custard
    100g condensed milk 

    Method

    1. To make the strawberry layer, roughly chop the strawberries and warm them with the sugar in a medium saucepan, stirring over a low heat for about 10 minutes, until the strawberries have become pulpy.

    2. Push the mixture through a fine mesh sieve. Add the lemon juice, cool, then refrigerate. Once cold, pour into 8 lolly moulds and add 8 lolly sticks. Freeze for 2 hours or until solid, adjusting the position of the sticks after about an hour if needed.

    3. Mix together the custard and condensed milk with a spatula. Chill until needed. Pour the mixture on top of the strawberry layer and freeze again, for at least 1 hour, until completely firm or until needed.

    Cook’s tipIf you don’t have a lolly mould, use disposable cups instead. Cover with clingfilm before inserting the sticks, to keep them in position.
