Soy-baked chicken with seed crust

Serves: 2
Zest and juice of 1 lemon
1-2 tbsp Amoy Soy Sauce Reduced Salt
1 tbsp clear honey
2 British chicken breast fillets
50g wholemeal breadcrumbs
2 tbsp mixed seeds
2 x 235g packs Waitrose Green Pak Choi, sliced
1. Preheat the oven to 200°C, gas mark 6. To make a marinade, mix the lemon zest and juice, soy sauce and honey together. Score the chicken fillets lightly and add to the marinade. Allow to stand for 5 minutes.
2. Mix the breadcrumbs, mixed seeds and 2 tbsp of the marinade from the chicken. Reserve the remaining marinade.
3. Place the chicken on a baking tray and press on the crumb topping. Bake for 20-25 minutes until the chicken is cooked through and there is no pink meat.
4. Heat the remaining marinade in a large frying pan and stir-fry the pak choi for 1-2 minutes until wilted. Serve with the chicken.
