Radish & cucumber salad

Serves: 4 as a side
150g pack French radishes, some halved, some quartered
1/2 small red onion, roughly chopped
1 cucumber, roughly chopped
1/2 x 20g pack dill
Dressing
2 tbsp lemon juice
1 tbsp extra virgin olive oil
1/4 tsp sea salt flakes
1/4 tsp ground black pepper
1. In a large bowl, combine the radishes, onion, cucumber and dill. In a small bowl, combine the dressing ingredients and mix well. Pour the dressing over the salad, mix it all up, then transfer to a serving plate and enjoy.
