You’ll find just the right balance of Christmassy flavours in this lightly spiced granola. Enjoy it year-round with yogurt and fresh or frozen fruit – or just nibble straight from the jar.
Makes: 725g (about 8 servings)
150g rolled oats
150g jumbo oats
70g dried cranberries
70g dried cherries
70g blanched hazelnuts, roughly chopped
50g flaked almonds
100ml maple syrup
150ml avocado oil (or mild olive oil)
1 tsp vanilla bean paste
1½ tsp mixed spice
1 orange, zest
½ tsp sea salt flakes
1. Preheat the oven to 180˚C, gas mark 4. In a large bowl, mix together the oats, cranberries, cherries and nuts. In a jug, mix the maple syrup, oil, vanilla paste, mixed spice, orange zest and salt. Pour over the dry ingredients and mix well.
2. Tip the mixture into a non-stick roasting tin, spread out and put in the oven for 15 minutes. Remove and stir, then return to the oven for 10-15 minutes until golden. Allow to cool before decanting into airtight sterilised jars or pots; store for up to 1 week at room temperature.
