Cherries, almonds and creamy mascarpone - what’s not to love? Serve in jam jars for a relaxed gathering, or wine or martini glasses for an elegant dinner-party dessert.
Serves: 4
180g pack Waitrose & Partners Cherries
2 tbsp icing sugar
1 tbsp lemon juice
150g mascarpone
150g natural yogurt
½ tsp vanilla bean paste
100g amaretti biscuits
1. Halve and stone the cherries, then toss in a bowl with 1 tbsp icing sugar and the lemon juice, and set aside for 15 minutes, stirring occasionally.
2. In a bowl, mix the mascarpone, yogurt, remaining 1 tbsp icing sugar and vanilla paste. Put the amaretti biscuits in a clean food bag and crush into rough pieces with a rolling pin.
3. Divide ½ the crushed biscuits between 4 wine glasses, tumblers or jam jars. Divide ½ the mascarpone mixture between the glasses, layering it over the biscuits, then top with ½ the macerated cherries. Repeat to create a second layer. Serve immediately or make up to 2 hours in advance, chilling until ready to serve.
Cook’s tip
For a more grown-up dessert, add 1 tbsp Disaronno Amaretto almond liqueur with the other ingredients in step 1.
