    Baked potato with mackerel

    2 baking potatoes
    2 essential Waitrose Peppered Smoked Mackerel Fillets, skinned and boned
    3 tbsp fat free natural yogurt
    75g frozen sweetcorn
    1 tbsp chopped chives



    1. Preheat the oven to 200°C, gas mark 6. Prick the potatoes with a fork and microwave on high for 5 minutes. Transfer to the oven for 30 minutes.

    2. Meanwhile, place the mackerel and yogurt in a food processor and pulse to give a coarse paste.

    3. Microwave the sweetcorn in a bowl covered with clingfilm until piping hot. Halve the potatoes, top with the sweetcorn and mackerel pâté, and sprinkle with chives.
