1 tbsp Olive oil
1 Onion, finely chopped
500g Aberdeen Angus Lean Minced Beef (10% fat), from service counter
300ml Red wine
2 Sprigs thyme, leaves only
2 tbsp Bay leaves, torn
2 tbsp Tomato purée
500g Waxy potatoes, such as Desirée or Charlotte
2 Small leeks, washed and sliced
200ml Waitrose Half-Fat Crème Fraîche
50g Butter, melted
