Prawn crackers

These large light and airy pale pink crackers, which are served in Chinese restaurants all over the world are made from tapioca flour, salt and sugar and prawns. They are especially popular in Indonesia and Malaysia as well as China.

Uses: Prawn crackers can be served before or during any Oriental-style meal. They are also delicious served with drinks with chilli or peanut dipping sauce.

To store: Keep unopened packets of crackers in a cool, dark place for up to 1 year. Once opened store in an airtight container and use within 2 days (they go soggy and stale very quickly).
